Cornflakes Cookies - Vegetarian


Deepavali is hardly a week away. Although shopping and house cleaning was done, baking cookies is also a must for me. Started of with an easy to prepare cookie. Here is to share the recipe, hope it turns out well for you guys too.

I have posted 5 vegetarian cookies recipes here today. The ingredients have been tremendously mixed and match to my creativity. They all turned out well indeed. 

Baking involves lots of creativity. Therefore please feel free to use any types of fillings, shapes and coloured sprinkles. You can also choose to sprinkle castor sugars or desiccated coconut on the baked cookies while it is still hot. Some of you like coloured cookies, therefore you made add some colours (very little). There is no strict law when it comes to baking; at least that is what my opinion is. One should try to experiment as much as possible with baking.  Happy trying folks.







Ingredients
250g Cornflakes
20g Castor Sugar
5tbs Honey
3tbs Peanut Butter
100g Butter
A handful of chocolate rice for decoration purpose


Method
1.Melt butter in a hot pan on small fire.
2. Then mix castor sugar, peanut butter and honey into butter.
3. Stir well till sugar is dissolved.
4. Do not boil this mixture. This is merely to dissolve the ingredients.

Add the mixture to cornflakes slowly and mix well. Scoop the batter to paper cups. Sprinkle some chocolate rice on it. Bake in preheated oven for 10mins, 160c-170c. Let it cool then place in airtight container.

Estimated: 100-130pcs

Rich White Chocolate Cookies - Vegetarian


Hurray, at last I tried a cookie that doesn't require baking!! :)
Simple and easy to do. Absolutely no baking  required at all!! 
Kids would simply love this. I loved it :))




Ingredients
·   600g White Chocolate (Cooking)
·   100g Mixed Fruits
·   100g  Almond Strips
·   10g Dried Blackcurrant
·   Handful of chocolate chips
·   Black cupcakes

Method
1.  Firstly, fill the cupcakes with a few chocolate chips.
2.  After that melt white chocolate in low fire. Do not place on direct fire. Use bain Marie or water bath method.
3.  Once it is dissolved, (with fire still on slow) add almond strips, dried blackcurrant and mixed fruits.
4.  Keep stirring slowly for 1-2 minutes till ingredients are evenly coated.
5.  Then use a teaspoon to scoop mixture into chocolate chip filled cupcakes. (Do not off your stove, keep it in slow fire during this process to avoid hardening of batter)
6.  Leave to dry and store in cool dry space. 

Estimated : 80pcs

Bain Marie method : Place a large wok/cooking basin ½ filled with water. Let it boil. Slow the fire. Break the chocolate into several medium sized pieces. Place them in a smaller non-stick bowl and place it in the water filled wok/basin. Slowly stir the chocolate and let it melt in the basin. Fire should be small at all times. It takes a while to melt because of the non-direct heat and also slow fire. Using this method, it melts chocolates evenly and creamy.
DO  NOT BOIL THE CHOCOLATE!

Ghee Cookies - Vegetarian



Another vegetarian yet simple cookies recipe. Happy trying.

Ingredients
500g Wheat Flour (sifted)
300g Ghee
150g Castor Sugar
A handful of of glazed sliced red cherries or in this case I used blackcurrant for decoration.

Method
1. Mix Castor sugar to wheat flour.
2. Melt Ghee in a non-stick pan in low fire.
3. Pour melted Ghee to wheat flour and Castor sugar mixture.
4. Make it into a dough.

Shape them to marble sizes and place a cherry on top of it. Bake in pre-heated oven for 10mins, 160c-170c.Let it cool then place in airtight container.
You may sprinkle some Castor sugar on the cookies while they are still hot.

Estimated: 130pcs (depending on the size)

Butter Almond Cookies - Vegetarian


I divided the dough into two equal portions and attempted Method B. It did turn out well. Both these preparations are vegetarian.


Ingredients
·   240 Grams Self Raising Flour
·   250 Grams Butter
·   120 Grams Corn Flour
·   120 Grams Sugar
·   1 tea Spoon Vanilla Essence
·   50 Grams Almond Nibs (Toast)
·   A handful of Chocolate Chips for filling
·   A handful of coloured rice for deco
Please divide this dough to 2 portions



Method A


Butter Almond Cookies 
Method for portion A
1.  Cream butter and sugar
2.  Add in the vanilla essence
3.  Then add in the sifted flour and corn flour and mix well
4.  Lastly, add in the almond nibs and mix well
5.  Sprinkle some coloured rice for decoration purpose.
6.  Scoop the batter into paper cups and bake at 150°c in a pre-heated oven for about 15 to 20 minutes. Let it cool then place in airtight container.

Estimated: 80pcs




Method B

Butter Almond Cookies with Chocolate Chips
Method for Portion B
  1. Follow method 1 – 4 as above
  2. Shape them to marble sizes and place a chocolate chip inside it.
  3. Press the dough to flatten it a little with a fork. You get a design of strips.
  4. Bake at 150°c in a pre-heated oven for about 15 to 20 minutes. Let it cool then place in airtight container.
